It’s almost Valentine’s day aka the commercial holiday that surrounds large masses of chocolate. (That’s my jaded valentine side talking.) I’m not going lie and say that I only want chocolate in February. I basically always want it. Enter: chocolate cake for one.
I had been looking for a mug cake recipe online that didn’t require a bunch of measuring, but also wasn’t filled with sugar. Because I’m lazy when I want cake. (I always want cake) I also didn’t want one filled with sugar, which I know is the entire reason to eat cake in the first place. Such a conundrum. This recipe was born from me wanting a mug cake badly enough to start experimenting and the first time’s a charm, because this baby was good enough to share. Even if you’re not alone on Galentine’s day, treat yourself. Or make two. Two mugs. Two cakes = happy.
Semi-healthy Chocolate Mug Cake
1 mug (or cake holding device like a bowl)
2 tablespoons of peanut butter
½ scoop of chocolate protein powder
1 egg
2 teaspoons of coconut flour
handful of The Good Life chocolate chips
splash of water
- Mix all together and microwave for about 1 minute. That’s it!
